High Protein Sourdough Discard Pancakes

Equipment:

  • Spoon or whisk

Ingredients:

  • 1 cup (200 grams) active starter (room temperature or refrigerated). See notes

  • 1 egg

  • 1/8 cup (33 grams) melted butter, coconut oil, or oil of choice

  • 1 1/2 (14 grams) tsp honey, maple syrup, agave, or sweetener of choice

  • 1/8 tsp salt

  • 2 scoops collagen powder

  • 2 scoops protein powder

  • 1/2 tsp baking soda

Instructions:

  1. Preheat Your Pan: Begin by preheating your pan on medium/high heat while you prepare the pancake mix.

  2. Prepare the Pancake Mix: In a bowl, thoroughly mix the active sourdough starter, egg, melted butter or oil, sweetener of choice, and salt until well combined.

    1. 1 cup (200 grams) active starter, 1 egg, 1/8 cup (33 grams) oil of choice, 1 1/2 (14 grams) tsp sweetener of choice, 2 scoops collagen powder, 2 scoops protein powder, 1/8 tsp salt

  3. Add the baking soda to the mixture and mix well.

  4. Cook the Pancakes: Once the pan is preheated, add a thin coat of oil evenly onto the entire pan. Use a 1/3 cup measuring cup to scoop the batter from the bowl into the hot pan for consistent-sized pancakes. Alternatively, you can eyeball a quarter of the mix into the center of the pan.

  5. Once the edges of the pancake are set and bubbles start to form in the center, it's ready to flip. This usually takes around 2-4 minutes, depending on the heat of the skillet.

  6. Cook the other side for another minute or until golden brown.


Condiments:

  • Top with a yogurt cup and fresh berries as a healthier alternative to whipped cream.

Notes:

  • Active starter refers to a starter fed 6-12 hours earlier. It is preferred to be bubbly so the pancakes turn out fluffy.

MEAL PREP:

  • After cooking, allow pancakes to fully cool before freezing for easy meal prep. Freeze these for easy meal prep. Heat a couple of them for 10 to 20 seconds in the microwave to defrost then toast them briefly in a toaster or pan for best texture.
